Promenade Jean-Baptiste Marty overlooks the Quai de la Consigne. The Consigne office was an authority to which all armed vessels in Sète had to pay a deposit.

The former headquarters of the curing facilities for oily fish (sardines, anchovies, mackerel), the quay is now home to premises for maintaining fishing nets.

Until the end of the 19th century, this quay was also known as the ‘cul-de-bœuf’ (cow's rump) as the ships moored here stern-to, especially the traditional bateaux-bœufs.
The bateaux-bœufs earned this name as they fished in pairs towing a net, like oxen pulling a plough.

The building with the pagoda-shaped roof is the fish market erected by the town in 1966.
